Black raisins
The most common type of raisin can be made from grapes of any skin color, with the final brown to black color obtained by drying. The higher the heat and the more direct sunlight, the darker the raisin and the more caramel the taste.
Its size is from 1.5 cm to 2.5 cm and it is chewy and chewy to eat. It is meaty.
Current
These types of raisins are produced in two types without seeds and with seeds and have a very dark color. Their taste is sour and spicy and they are slightly smaller than other types of raisins.
Sultans
Its original name comes from a Turkish green grape called seedless Thompson, which is mostly used to make raisins around the world. Today, "Sultana" in Australia and the UK refers to the dark brown or reddish-amber raisin produced from Thompson seedless grapes.
The same product is simply called "raisin" in the United States. Equal to or somewhat larger in size than black currants and usually slightly milder.

Red raisins
This delicious raisin is made from grapes with red skin. There is not much difference between their final color or size compared to black raisins. Also known as flame, it is obtained from red seedless flame grapes and is large (1.5cm), plump, dark red and extremely sweet and sour.
Green raisins
These green raisins are extremely thin and are 2 to 3 cm long. They are sourced and produced throughout the Middle East and Central Asia. Slightly dense and chewy, with a mild tartness reminiscent of green grapes. They are usually dried in a well-ventilated but dark environment, which preserves their pale jade color, which today is sometimes improved by sulfur dioxide.
Golden raisins
Like natural seedless raisins, these are obtained from Thompson or Golden seedless grapes, but are oven-dried to avoid the darkening effect of sunlight.
Some of the “ "Golden Raisins" sold as such have been treated with sulfur dioxide gas to prevent them from darkening during the drying process. They are fruity and spicy and have less caramel or toffee characteristics than black raisins.

Raisins in Kashmir
Kashmer raisin, which is also called long raisin, is prepared from core grapes, which is a local type of Iran.
This type is famous for its special sweet and sour taste and its elongated shape. Long raisins, like golden raisins, are prepared using the sulfur fumigation method and are dried in the shade until the color is golden amber. This type of raisin is popular for those who do not like the strong sweaty taste of other types of raisins.
Sultanate and Malayer raisins (bright / dark)
Soltana raisins are light to dark brown in color. They are dried in special drying plants, and because of their high sugar content, sultanas are very sweet and taste similar to honey. But the most popular of them is the dark brown Sultan, which has no sulfur and is widely used in the bread industry, cake and pastry bakeries, grain and cereal manufacturers.
