According to the above explanations, the oldest restaurants in Iran were related to people who cooked and sold food in caravanserais. Caravans were moving across the country and entering the caravanserai to rest. The tired caravan needed a safe environment to eat. Anticipating the arrival of the caravan, people would prepare food for them and welcome them after they arrived. Chapars have also been active in the country since ancient times, providing food to these people can also be a part of the history of restaurants in the country. In historical sources, there are records about the first caravanserai that welcomed its guests as follows:

The first guest house that was established in the new style in Iran was called "Mehman Khaneh Nazaft" which was established in Tabriz by Mirza Ishaq Khan Mehmed Al-Dawlah in 1321 AH. Haji Sheriff; around Baghmisheh; Sir Mirza Nasrallah Alley - where the Preparatory School and Tarbiat Library were later built, had a large caravanserai known as the Sheriff's Caravanserai. This caravanserai was inherited by Mirza Ishaq Khan; Kodkhoda was assigned to Baghmisheh, and he demolished it and created a building with many rooms, a kitchen and a dining hall, and named it "Cleaning Guest House".

In the announcement that was published on the 25th of Sha'ban 1321 AH about the start of this guest house, there were notes about welcoming guests and serving food outside, which was completely new at that time. But if we want to look at the present-day form of restaurant management and examine its history, we can provide the following explanations: In the past, people did not have much desire to establish such places, and some did not like working in hospitality and catering services, as Seyyed Masoud Nurbakhsh writes about the history of these places:

In the first years of the last century in Iran, not much attention was paid to accommodation and reception facilities. Domestic travelers did not show interest in staying in guest houses and mostly stayed in the homes of friends and relatives. Foreign travelers were not enough to cover the costs of these units. The owners of these few places even tried to advertise in the press of that time to attract customers. It is not inappropriate to mention an example of these advertisements that were published in the information newspaper by the "20th Century Hotel" in 1306:

"At this time, when the attention is focused on the ease of travel and the residents of the provinces eagerly come to see the capital, the 20th century guest house located near the prestigious British Embassy, which is one of the old guest houses in the center, provides comfort to the arrivals from every It has been provided for, and especially in house rent and food price, it is intended to save completely. " Naderi Cafe In 1306, a Russian immigrant named "Khachik Madikyans" opened Naderi Cafe on Naderi Street (today's Republic). This person worked as a pastry chef for the first time in Tehran, and soon after, he built a guest house with the same name, which is still open, next to "Naderi Cafe". For the first time in Tehran, it was in the restaurant of this hotel that Iranian dishes such as steak, beef stroganoff, etc. were offered to Iranians. Also, for the first time, "Cafe Glace", ice cream, French and Turkish coffees, and various types of mold breads were made available to those interested by the founder of this guest house.
