Dandeh Kebab, which is prepared from lamb ribs, is a food of the Kermanshah region, and the main market offering it (such as Lashkar Abad falafels or Rasht Shahrdari Square kebab cart) is offered around the historical complex of Taq Bostan. But the place for shishlik is from the Shandiz Villas side of Mashhad, and the restaurants of this area, which are very famous, offer the best type of shishlik at very high prices.

It is also good to know that shishlik was registered nationally in 1996, but kebab ribs are still going through the process of national registration and will probably be registered in less than one or two years.

Shishlik is much older than ribs. There is kebab and it is mostly seen in Central Asian and Azeri-speaking countries.

But the biggest difference between these two types of kebab is in the method of preparation and taste, color and other things; For example, kebab ribs are made from a row of marinated lamb ribs and red sauce.

While Shishlik Chandiz is prepared from straight pieces of special and young lamb with the cuts you see in the picture below, and it is flavored and skewered as we have taught.

First, they cut a large piece of mutton rib, weighing approximately one kilogram, in a wide and long way.

Then they insert three to four skewers vertically into the meat with pounded kebab skewers at the same time. It should bear the weight of the meat and not lose its shape.

Then, with the back of a sharp knife, they hit the meat with strong blows. After that, the meat is kept in the refrigerator for a few hours and then the meat is ready for grilling. They heat some oil in a pan and then add a lot of tomato paste. It is poured and fried, then salt, a little pepper, lemon juice and saffron are added to it and a thick sauce is prepared.
When grilling, put the ribs on medium heat of coals and at the same time pour the thick sauce continuously with a brush. They chop the ribs here and there until the kebab is ready, and again at the moment of lowering the kebab, they rub the sauce on the meat and quickly put it in the bread and decorate it with onions and lime or orange.

"Shishlik"

Shishlik meat, which is rib meat, is usually marinated overnight in ingredients such as vinegar, dry wine, or sour fruits, in addition to herbs and spices. While it is not unusual to see shishlik on restaurant menus, usually in West Asia, shishlik skewers are grilled and sold by street vendors on wood or charcoal. Shishlik is usually cooked on the grill. For example, in Poland, szaszłyk (local shashlik, pronounced shash-wik) is a very popular fast food dish that usually appears on the menu of busy restaurants.
