Goselma (goselma)
Guzlem means "don't wait" in Turkish and is a type of food that is easily and quickly cooked. In cooking this dish, condensed yogurt, eggs, garlic, oil and spices such as salt, pepper and turmeric are used. According to taste, chopped walnuts, thyme and hot mint can also be used in cooking. In Türkiye, this dish is known as yogurt soup, which is different from guzelme only in the way of cooking, you can serve this dish with bread.
Urmia
Among the other delicious foods of Urmia, we can mention Shurjeh; The food that the people of this city serve both as an appetizer and as a main dish. The basic ingredients for cooking this dish are hard yogurt, eggs, hot onions, meat and corn starch, which you can eat with or without rice. Shurjeh is a delicious local food and contains various vitamins, which according to traditional medicine researchers is very useful in controlling fat, blood cholesterol, and strengthening teeth and bones.

Gizatma
Gizatma is a food that is very easy to cook; Eggplants, pumpkins, potatoes, garlic and tomatoes are used in cooking gizatma, some also add carrots in the preparation of this dish. To cook, all the ingredients are fried and then mixed in the sauce. You can enjoy this simple dish with crushed garlic and diluted yogurt. In Turkish, gizatma means frying.
Coriander barbecue
One of the local and traditional kebabs of Urmia is coriander kebab, which is basically a type of traditional Azeri meatball. This kebab is made of vegetables special to this meatball, most of which is coriander, along with minced meat, onions, cobs, eggs and dried lemon. Soak the cobs for two hours, then fry them together with minced meat, and by adding turmeric and other desired spices, prepare the meatball sauce and add coriander to it at the last stage. When they are fried well, break two eggs in it and stir well. The sauce is ready, take it out little by little and grind it to the size of a walnut and fry it again in the pan.

Cabbage cabbage
Cabbage stew is one of the most famous dishes of the Azerbaijan region, just like the hair-leaf stew. Urmia cabbage soup has a delicious taste and cabbage, minced meat, rice, cobs, sumac, water or vinegar, herbs (parsley, mint, tarragon, etc.) and various spices are used to prepare it.
