The ethnic diversity of Golestan province has caused the cities of this province to have a variety of local foods. For example, only in the city of Gorgan live ethnic groups such as Gorganis, Estrabadis, Baluchs, Maznis, Sistanis, Turks (Qazalbash, Turkmen, Azerbaijanis, Kazakhs) and immigrants from Khorasan and Semnan provinces. Each of these tribes has its own culture, customs and local foods, that's why the table of Gorganis is very colorful and full of different foods.
Chakdarmeh is one of the most famous traditional dishes of Gorgan, Bandar Turkmen and Aqqola region, which is usually cooked in parties and gatherings and even picnics of the people of this region. Among the other names of this local dish, we can mention Chekdirmeh or Chegdirmeh. The appearance of Chekdarmeh is very similar to our own Istanbul Plu, and to prepare it, they cook ingredients such as mutton, tomato paste, water, and spices, and then separate the meats and add rice to the remaining broth. Finally, after cooking, they put the rice in the dish and put the pieces of meat on it.
This cooking method gives a unique taste to the food. Turkmen cook this food in a special cast-iron dish called "Kazan" and eat it together with camel butter and vegetables. In the traditional cooking of Chekdirmeh, lamb meat is usually used, but nowadays some cook this dish with chicken and fish.
