Store entrance:
First let's talk about the supermarket entrance.
The purpose of entering the store is to make you feel comfortable, good and happy. When you walk in, usually one of the first things you see is the flower section. They put this there because the flowers are fresh and beautiful. They smell so good, so it gives you this sweet, happy feeling, like you're so happy to walk into the store.
At my local store, they also have a bakery in the front. Again, who can resist the smell of freshly cooked food?
The entrance is also usually designed as a "one-way" so you have to walk through the entire store (or at least the cash registers) to exit the store.
Layout of stores and supermarkets:
Have you ever noticed that most stores are designed the same? Fruits and vegetables are always the first section and milk and eggs are always arranged at the back of supermarkets?
If you've never noticed this before, I bet I just blew your mind.
Fruits and vegetables are kept at the front of the store because we react well to color. Bright and fresh scenery from that section makes us feel really great and stimulates our appetite which makes us ready and willing to buy!
“Essentials” such as milk and eggs are kept in the back of the store. So if you want to go in for just a few things, you have to go through all the aisles to get to them. Tempted by all the sales and other items you didn't come to the store for!
I've read some conflicting data on this one. It is also claimed that they keep the milk in the back because the milk needs to be refrigerated the fastest, so it needs to be close to where the trucks unload. But in any case, I think it's very convenient that the stores just have to do it.
Let's talk about the actual positioning of the product.
Product location:
Did you know that shelving is also set up in a very special way?
More expensive brands are at eye level, so it's the first thing we see when we look at the shelf. Generic items are placed lower, so you have to put more effort into crouching to get them.
Products that try to attract children are placed at their eye level, because having a child grab something and beg to have it is much more effective than convincing parents that children need sugary snacks!
Popular items are placed in the middle of the aisles.
Baskets:
Ever wonder why there never seem to be enough baskets? That's because having a big cart makes you spend more! Empty space in your shopping cart is a visual cue that you haven't bought enough. When you have a basket, you fill it faster and get full sooner. It's also why stores choose those wheeled carts instead of trolleys, they're more convenient for customers, but they're also bigger!
Vegetable misting:
Have you ever noticed fog sprinkler activated every 15 minutes in the vegetable section can You thought it was because they needed to be "kept fresh" right? No, it is wrong! This is actually a psychological trick to make us think they are fresher! Spraying these vegetables doesn't really help with hydration and can often backfire as too much moisture causes mold. But, shiny juicy greens are much more attractive than dry dull greens. Plus, most of these vegetables are actually sold by weight. That means the water that stays on them can actually increase the price! So always remember to shake your wet vegetables!
Music:
Studies have shown that slower music keeps us calm and moving through the store at a leisurely pace. While loud energetic music makes us want to move and get the job done! That's why when you go to the grocery store, they usually play soft oldies instead of radio hits. (Remember, the more time you spend in the store, the more opportunity they have to sell you!)
Free samples:
I love a good free sample. But even they have consequences! Free samples make us owe the store a refund, especially if it's a good sample. It's probably not what you came in for, but I bet you want to buy it.
Auction:
How many times have you tried to justify your purchase by saying "Oh, but it was on sale"? For me, it's too many to count.
