This normal floating of chicken in ice water will lead to water penetration in the chicken tissue.
Water penetration, while increasing the weight of the chicken, will also reduce the quality of chicken meat. As a high-quality white meat, super chicken usually weighs between at least 1,300 grams and at most 2,500 grams. The regulatory body also deals with raising and producing chicken with more sensitivity and precision; Therefore, we can use green chicken with more confidence.
