Concentrate is a form of substance that has removed most of its main components or solvent. Concentrates are usually formed by taking water from a solution or suspension, such as juice, and turning it into a powder or extract. The advantage of producing concentrate is that by removing water, the weight of the food item is reduced, so it is easier to transport and at a lower cost, in addition, the concentrate can be easily returned to its original state during consumption by adding a solvent (usually water) and they consume.
To produce fruit juice concentrate, essential oils or extracts are prepared from fruits, and by mixing this essence with sugar and water, various types of fruit juices are prepared. These types of juices are only energy-generating due to the presence of sugar and usually do not have many properties; But fresh juices are rich in vitamins and minerals and have a very high nutritional value.
Fruit concentrate
The fruit is transferred to the presses by the sorting line, and after washing and removing garbage, the necessary temperature is given in the presses, and then it is sent to the finings, that is, the tanks are at a temperature of 50-55 degrees, then they are sent to the vacuum filter and green filter. This is done to remove the turbidity of the juice and lower the turbidity NTU. After that, it is sent to tanks 21 and 22, and then it is sent to the concentrator, that is, the final step is the concentration, which is the standard brix of each concentrate, the maximum NTU should be 10.
Note: The main factor for color change is temperature. If this temperature is lower, it causes the juice to ferment (fermentation is like creating a sour state, etc.)
